The yellow iris distinguishes the silk snapper from its close relative, the red snapper, which has a red iris. The two fish are virtually indistinguishable otherwise. Like red snapper, silk snapper is a moist white fish with a mild, slightly sweet flavor. It yields small fillets and is sold with the skin on to hold together its delicate flesh.
