Pacific red snapper is distinguished by its bright red and pink skin with a silver sheen, not to be confused with vermilion rockfish, also known as local red snapper. It is a delicious, moist white fish with a mild, slightly sweet flavor. It yields small fillets and is sold with the skin on to hold together its delicate flesh. It is a lean source of protein rich in potassium, selenium, vitamin A, and omega-3 fatty acids.
