Our world-renowned local sea urchins are hand-harvested by divers from the waters off the Santa Barbara Channel Islands and are brought fresh from the sea to the market each weekend. The sea urchin roe, also called "uni" when used in sushi, is considered a delicacy around the world. Some call it the "foie gras of the sea." It has a thick, creamy, and buttery texture. It smells like the ocean and has a briny flavor. Our sea urchins are the cream of the crop and are harvested from only the sweetest kelp, resulting in a sweeter flavor.
