Not to be confused with yellowfin tuna that has bright pink/red flesh, yellowtail is part of the jack family. It has a mild, sweet flavor and firm texture. a delicious white fish. Its healthy fat content gives it a buttery texture and rich flavor. It is high in protein and a great source of omega-3s. Its firm and meaty texture make it easy to skewer and a great choice for grilling or BBQ'd. Tips for the BBQ- lightly coat the fish in olive oil, sprinkle with salt and pepper, and grill over high heat for 3-4 minutes per side. Yellowtail can be cooked to medium-rare so not to dry out the fish.
