Tuna Tartare Tostada

2.5 oz ahi tuna, sliced
1 oz salsa macha
1/4 ea avocado, sliced
2 oz grapefruit, segmented
Fresh cilantro, lime quarter, salt to taste
3 ea guajillo pepper, no stem no seeds
3 ea japonés pepper, no stem no seeds
3 ea garlic clove
1/4 ea white onion
1 pinch dried oregano
1 tsp white vinegar
salt to taste
neutral oil for frying

Directions
Salsa Macha
Heat oil on medium in sturdy pan. Fry both peppers for 30 secs each side, add to blender. Fry garlic and onions until slightly brown and soft, add to blender.
Add the remaining ingredients, including the frying oil, to blender. Pulse until the salsa is broken down but not pureed. It should be a little chunky.
Tostada
Place sliced tuna on tostada to cover the surface, season with salt.
Place sliced avocado on top of tuna, season with salt.
Add grapefruit segments with a bit of the juice around to tostada.
Finish with salsa macha and fresh cilantro. Serve with lime.
