Sesame-Seared Ahi Tuna

Ingredients

1 lb ahi tuna cut into 2 1/2 steaks (1-1 1/2 inch thick)
2 tablespoons black and white sesame seeds (each)
1 tablespoon soy sauce
1 large avocado
Juice from 1 lime
3/4 cup fresh cilantro
4 garlic cloves
Black pepper and salt to taste
1/4 cup olive oil
2 tablespoons chopped cilantro
1/2 cup each (pineapple & tomatoes)
1 shallot, diced
Juice of 1/2 lime
Salt to taste
1 tablespoon olive oil
1/4 cup each (soy sauce, brown sugar)
4 garlic cloves, minced
2 tablespoons sesame oil
1/2 cup water
Tuna Seasoning
Avocado Paste
Pineapple Salsa
Glaze (optional)
Directions
Use about a tablespoon of soy sauce on each steak and then layer with black and white sesame seeds.
Make avocado paste to use as bed for seared tuna. Put all of the ingredients into a food processor until a paste is formed.
Prepare pineapple salsa.
Heat charcoal to 425-450 degrees and heat cast iron skillet with a small amount of oil and spread with spatula. Cook tuna 60-90 seconds on each side to an internal temperature of about 65 degrees. Slice.
