If you like ceviche, this is another refreshing way to enjoy raw seafood. Though traditionally made with shrimp, this aguachile recipe has been adapted for half-moon scallops.

Ingredients
Half-moon scallops, thinly sliced
Olive oil
Lime juice
Red onion, thinly sliced
Jalapeño, thinly sliced or finely chopped
Salt and pepper
Directions Thaw scallops in refrigerator overnight.
Slice scallops thinly and cover with thinly sliced jalapeño and red onion.
Drizzle with olive oil and lime juice. Let sit for 10 minutes and season with salt and pepper before enjoying.
Recipe Note
This recipe can also be enjoyed with sliced cucumbers, avocado, and cilantro for garnish.
