Lunch / Dinner
2 lbs salmon (skin removed)
1 cup/1 handful spinach
1/2 red onion, cut in 4 smaller pieces
1/4 cup cilantro
1-2 inch fresh ginger, minced
1-2 tbsp tamari ⠀
Place salmon in food processor and pulse until you get a paste-like consistency.
Remove salmon from food processor and place in a large bowl. Add remaining ingredients, lightly pulse, you want the veggies to be chopped but not liquidy, because this will cause patties to be mushy.
Remove ingredients and add to salmon bowl and mix the two together or add both back to food processor and pulse a few times to mix really well. Add sea salt and pepper and mix well. Form patties and place on a plate or platter.
Cook on the grill or stovetop to desired preference. I like mine a little raw in the middle so I find 3-5 minutes on each side is perfect.
I like making them the before so the flavors can really marinade into the salmon. But making them day/night of is completely fine.
