Mediterranean Baked Halibut

Ingredients

1 lb of California halibut, or other white fish, such as red snapper or California white seabass
3 tablespoons of olive oil
1 tablespoon of red wine vinegar
1 tablespoon of lemon juice
2 teaspoons of black pepper
1 teaspoon of salt
½ cup cherry tomatoes, sliced
¼ cup fennel fronds, chopped
½ lemon, sliced
3 tablespoons of capers
¼ cup green olives, pitted and sliced
Directions
Preheat the oven to 375 degrees Fahrenheit.
Dry the halibut with paper towels.
Place in a baking dish.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, pepper, and salt.
Pour over the halibut.
Add the tomatoes, fennel fronds, and capers.
Place the sliced lemons on top of and underneath the halibut.
Bake the halibut for 15-20 minutes until flesh is opaque.
Add the sliced green olives and serve.
