Lemon Pesto Salmon
Lunch / Dinner
1 cup pine nuts
1 lemon, juiced
1 clove garlic, minced or left whole
1 handful spinach
2 cups fresh basil
2-3 tbsp. extra virgin olive oil
Dash of sea salt
Dash of pepper
2-3 tbsp. water (depending on desired consistency)
Preheat oven to 350F. Lightly grease a baking dish. Place salmon in dish.
Put all pesto ingredients in a food processor (small high speed blender will work, but I prefer food processor). Turn on food processor to high until ingredients are well mixed. I like my pesto a little crunchy.
Take pesto and put on top of salmon and add a lemon slice. Bake for 10-12 minutes. Bake time may change depending on oven and thickness of salmon fillets.
Enjoy with BYBW green beans (recipe in traditional cookbook) and sweet potatoes.
