1 lb fresh halibut
Cajun seasoning (Chef Prudhomme’s Blackened Redfish Magic recommended)
1 medium mango, pitted, peeled and coarsely chopped (1 cup)
3 tablespoons fresh lime juice
1 tablespoon finely chopped, seeded jalapeño chile
1/4 teaspoon salt
Optional: 1 tablespoon finely chopped fresh cilantro
Mango Salsa
Directions
Season and grill halibut.
Combine ingredients for mango salsa.
Serve mango salsa over grilled halibut.
