Lemon Grilled Opah

1 opah filet
Salt and pepper
Squeeze of lemon
1 bunch of asparagus
Zest of one lemon
1 tbsp of butter
Directions
Grill the asparagus to al dente and set aside.
Season the opah with salt and pepper on all sides. Add a juice of one lemon.
On a grill or grill pan over medium high heat, oil the grill and once hot add your opah. Cook for 2 minutes until nice grill marks form, rotate 90 degrees to get the crosshatch grill looks and grill another 2 minutes.
Once you have grill marks on the first side, flip over and cook another 3-5 minutes. Once it is flipped, I add a tablespoon of butter to the top of it to melt to add richness and flavor. Remove from the grill once desired cook is reached. I removed at 120*F for a more cooked fish.
Remove and serve over asparagus with lemon zest.
