A terrific white fish, our California halibut is moist and tender with a mild flavor and perfect for the person that doesn’t care much for fish. Its lean meat is softer and smoother than its Northern Pacific cousins, making it ideal for cooking methods such as frying, pan searing, poaching and steaming. Although excellent on the grill, this fish must be handled with care as it may fall apart. Foil or a fish basket is recommended when grilling.
